1 pkg of Ritz Crackers (the original recipe said to use the Low Sodium ones but I say, live dangerously.... I actually think you could use a generic brand with the same results)
1 pkg of Hersheys Milk Chocolate Chips (again... the brand probably isn't important, this is just the brand I used)
1 pkg of Hersheys Dark Chocolate Chips
2 tsps of PEPPERMINT extract (do not use mint ... it MUST be peppermint!)


Melt the chips in a glass bowl in your microwave. I am really good at this technique. You put them in a glass bowl and melt for 1 minute. Stir well. Melt for another minute. Stir well. Melt for about 20 more seconds and, yes, stir well. The chips should all be melted by now.
Stir in the peppermint extract. Depending on how much you like the flavor you can add less (1 tsp). Now the fun and really messy part. Start dipping the crackers. Make sure you coat both sides and then let them drip the excess off. Place on a foil lined or parchment lined cookie sheet. I put mine in the fridge for about 30 minutes to set. Okay, actually, I ate about six of them before doing this.
I'm sure someone with more finesse could make them look prettier but they truly are really, really good.
